Peach cobbler bars

Happy July everyone!

If you recall my first monthly favourites post from April, I have a subscription to the magazine “Style at Home.” For the month of August, the magazine had the most delicious recipe that I couldn’t wait to try out and share with you guys!

This recipe is perfect for the summer, especially for a bbq or as a midnight snack 😋

350 degrees

Time: 55-65 minutes


1/2 cup softened butter

1 1/2 cups all-purpose flour

1/2 tsp salt

1 tsp vanilla

3/4 cup granulated sugar

4 peaches sliced thinly

1 tsp lemon zest

Tip: use peaches that have a soft touch to them and a sweet smell, this means that they’re baking ready.


Spray a baking pan and then line with parchment paper, heat oven to 350 degrees Celsius

Add butter & 2/3 cup of the sugar and mix together until fluffy.

Add half the vanilla and the salt, mix.

Add flour to the mix until it turns into a coarse meal. Set aside 1 cup of the dough for the topping (the recipe called for 1 1/4 cups for the topping but I didn’t use that much, so I altered it a bit)

Take the dough mixture and press into a lined pan.

Put peaches and the rest of the vanilla, sugar and the lemon zest into a bowl and toss

Layer the peaches over top of the dough and then sprinkle the remaining dough on the top. Bake until golden, 55-65 minutes

Let the cobbler bars cool completely before removing from the pan. Slice and serve

Optional: Serve with vanilla ice cream

  1. These look like they would be easy to make. I’m not that great a baking but this looks simple enough and peach season is just around the corner.

  2. Yum yum yum! I am always looking for fun baked good to make with my kiddos. And this sounds perfect. I agree perfect for a BBQ day.
