Happy Valentines; raspberry sugar cookies

Happy Valentine’s Day everyone! Sugar cookies are my absolute favourite cookie to make for all sorts of holidays! Last year I made some Easter egg cookies with gorgeous pastel coloured icing. This year I wanted to make some cute heart cookies, with Bens help of course, to celebrate Valentine’s Day!

This cookie recipe is the same as the one I made last year but with a different, more fun icing recipe!

Cookie recipe: 350 degrees • 7-10 minutes

1 cup softened butter

1 cup white sugar

1 egg

2 3/4 cup all purpose flour

2 tsp baking power

1 tsp vanilla

Steps:

Cream the sugar and butter together, add the egg and vanilla, mix. Add flour and baking powder in a separate bowl, and slowly incorporate into wet mixture. Once dough is formed, roll out onto a lightly floured surface and cut into desired shape. Place onto a tray covered in parchment paper and cook on 350 for 7-10 minutes

 

Raspberry icing:

1/2 cup softened butter

1 cup icing sugar

1/2 tsp vanilla

1/2 cup pureed raspberries

Steps:

First purée the raspberries in a food processor or blender, or you could even use your electric mixer. In a separate bowl, mix icing sugar, butter and vanilla. Add the raspberry purée and mix, don’t mix too much or the icing will become over whipped.

  1. Pureéd raspberries! What a great idea! The colouring always freaks me out. I was thinking beet juice colouring but raspberries Avenue better!💗💗
